The Center for Disease Control reports that 33.2 % of Kentucky residents are obese with Bracken at 32.4%, 46.2 % consume fruit less than 1 time per day and 24.9% consume vegetables less than 1 time per day.  In fact, adults in Kentucky rank among the highest for poor consumption of fresh and vegetables.  

 

As in most rural counties, Bracken, has very limited opportunities for women and mothers to socialize.  The Bracken County Family and Consumer Science Agent created a fun night out for women offering hands on activity or craft.  “Make it, Take it, Try it” bi-monthly events have not only promoted Extension, but introduced many women to positive socialization in a healthy and inviting atmosphere.  Nutritious “Plate it Up” recipes were offered and sampled at each event.  Participants were encouraged to incorporate these recipes into their family meal plans at home These events have peaked the interest of housewives, working mothers, single mothers, widows and women of all ages. Since most women are in charge of meal prep and grocery shopping for their families this was the perfect target audience for introducing tasty yet healthy recipes in hopes for higher fruit and veggie consumption amongst county residents.  

 

Since the beginning of the program 3 years ago, we have had many women remark that after trying the recipes themselves they were more apt to cook them for their families.  One participant stated that the “Cauliflower on the Side” recipe changed her view of cauliflower and that she did not know it could taste that good.  Her entire family now enjoys the entrée and has been more receptive to trying other vegetable dishes.  Many of the participants have tried things for the first time and have become more open to putting a healthier fresh spin on some classic dishes.   By far, the most popular recipe that is fixed at home has been the Cucumber Corn Bean Salsa.  It seems to be a hit with adults and children both.
