Knox Central Teen Cuisine

Outcome: Long-Term Outcome

According to the Centers for Disease Control 15.6% of of adolescents were overweight (> 85th and < 95th percentiles for BMI by age and sex, based on reference data) and 17.6% were obese (< 95th percentile BMI by age and sex, based on reference data). A Community Partner who works for HealthCorps, Inc reached out and asked if we could partner and provide nutrition education at Knox Central High School. In order to combat the above statistics we put together an after school Cooking Club and the curriculum used was Teen Cuisine. 

The most memorable moment from this class is when a participant let me know that the Parmesan Chicken we made the week before, from our 2018 Calendar, was so good that the participant made this for a relative. 

Upon completing this program families showed changes in the following areas: 

  • 3 out of 6 participants improved in fruit consumption
  • 3 out of 6 participants improved in milk consumption
  • 3 out of 6 participants improved in grain consumption
  • 3 out of 6 participants improved in choosing low-fat foods
  • 3 out of 6 participants improved in being more active
  • 3 out of 6 participants improved in placing foods back in the refrigerator within 2 hours
