The Marion County Cooperative Extension office’s Expanded Food and Nutrition Program has partnered with the Lebanon Public Housing once again. The program administrators voiced that they had some residents who had trouble increasing their consumption of fruits and vegetables in their daily diets. The Lebanon Public Housing requires residents to participate in various programs throughout the year and this program one of them. We had eight families total to participate.  Each program session started out with a My Plate lesson, specifically on the fruit and vegetable groups. With each lesson, participants were taught on the recommend daily amounts and it was broken down even further as to how important it is to get those amounts because they contain vitamins that are vital for their bodies. As with a lot of people we encounter, some of the family members were not fond of vegetables. I took the approach to introduce them to a Hello Bite. This was an easy way to have the participants introduce themselves to a new vegetable without a big commitment. After some time with each class, the individuals began to try more fruits and vegetables willingly. Several shared that they actually enjoyed trying out new vegetables and were beginning to incorporate them into their daily diets. One of the participants commented that, “If I had not tried the Hello Bites in class, I would not be eating and cooking more vegetables at home like I do now.”
