The Boone County Nutrition Education Program partners with the Family Consumer Sciences Relationships class at Boone County High School to teach students how to eat smart. This partnership benefits the 55 students, who have learned many valuable life skills, including cooking, food safety and the relationship between food and health. The assistant produced a series of nutrition classes every Friday for six weeks following the Teen Cuisine youth curriculum in which students would practice constructing healthy recipes. The hands-on classes allowed students to set up their workspace, arrange the ingredients and tools needed, prepare the recipe with their team, and critique their final product. Students can reproduce the recipe for their families at home.
One student in the class experimented with different whole grain pancake toppings. He compared the sugar in the light syrup to a fresh fruit topping with low fat yogurt, recommending to peers the nutritional value of the fruit. According to a national computer system, 98% of the high school students enrolled in the series improves their diets in at least one core area. The teacher appreciates the real world life skills that will form the basis of a healthy lifestyle into adulthood as well as the professional student workbooks for them to refer to for food preparation tips.
