Major Program: Food Preservation

Plan of Work: Addressing Family Life Needs

Outcome: Initial Outcome

Retired Family and Consumer Sciences Agents, Peggy Helton and Myra Braden worked with Powell County Extension staff to present the NEP Food Preservation Workshop at the Powell County Extension Office June 18-21, 2018. A total of eleven people participated in the three-day, hands-on workshop. Two male and nine female participants took part with a wide range of knowledge and skill levels. Powell County Family and Consumer Sciences Agent, tested two pressure canner dial gauges during the workshop for participants and did activities and pre/post-tests. She also had them to address an envelope to themselves so she can send out the recommended follow-up survey in three months. Participants actively participated in hands-on activities and were very proud of their jars of green beans, tomatoes, salsa and freezer jam. Five participants stayed after the workshop to learn more in-depth information regarding pickling and fermentation. One participant volunteered to take three copies of the UK Food Preservation Book to the local public library so they can be checked out by library patrons and reported that the library had three of the Ball books that are on the okay-to-use list. One young man who accompanied his mom to the workshop appeared in the first few minutes of the workshop to be unhappy to be there but the next morning when his mom was running behind schedule was exasperated that she was going to make them late and miss something important (and fun!) We were pleased that a retired UK employee, Rose Runyon, who had worked for Dr. Vail was an enthusiastic participant, along with NEP staff member, Jann Knappage. Jann said she might be able to come to the Jefferson County Workshop in September. We are confident that every participant learned and will apply one or more of the concepts taught during the workshop.
