When in Doubt, Throw it Out

An adult group in Jefferson County participated in the Kentucky Nutrition Education Program. The class was held at an Adult Senior Living Facility.    The lesson was taught by the Supplemental Nutrition Assistance Program Assistant. The importance of Food Safety was the topic of the discussion.  The assistant went on to explain that letting foods sit out for more than two hours is unsafe and could produce bacteria, which can cause foodborne illnesses.  The Seniors expressed that as they were growing up they used to let food sit out on the counter to thaw.  The assistant pointed out that letting foods sit out longer than two hours is no longer safe, and to thaw meats in the refrigerator instead of leaving them out on the counter. 

Some of the members from the classes have graduated. As a result, 67% of the members showed an improvement on not letting foods sit out for longer than two hours. Of the graduated members, 100% showed improvement on not thawing foods out at room temperature.
