Yummy Vegetables

Author: Kati Noble

Planning Unit: Breathitt County CES

Major Program: Accessing Nutritious Foods (general)

Outcome: Intermediate Outcome

According to the 2016 Kentucky Kids Count data, Breathitt County rates 115 out of 120 counties for the health of children.

Breathitt County SNAP Ed Assistant, Kati Noble, taught the Exploring My Plate with Professor Popcorn curriculum in partnership with Breathitt County Schools. During one visit to a 4th grade class, the MyPlate lesson was taught to 23 students. Students learned about making healthier choices, food safety, and the importance of eating a variety of different foods.

Students were asked, “Who wants to taste a green pepper?” Some students were hesitant to try a new vegetable. After tasting a variety of different fruits and vegetables, students stated that the green pepper was, “delicious” and that they would ask their parents to buy green peppers at the grocery store.

Programs such as Professor Popcorn allows students the opportunity to try fruits and vegetables, encourages guardians to purchase fruits and vegetables, and improves the overall healthiness of children.
