The Nutrition Education Program Senior Assistant was selected to participate in a pilot program “Healthy Holiday Meals on a Thrifty Budget”. The NEP Senior Assistant partnered with Fallsburg Elementary School, Blaine Elementary School, Louisa East/West Elementary School, and Lawrence County Middle & High School Family Resource Youth Service Coordinators (FRYSC) to assist with handouts and delivery of the 100 Thanksgiving Baskets for low-income Lawrence County families. One of the components of the pilot included a food safety component “Roasted Turkey Guide”, which each participant received a copy of in each food basket. Each guide shows how to safely store and thaw a turkey, separate raw turkey from other foods to help prevent cross-contamination, roasting/cooking a turkey, and how to use turkey leftovers with delicious recipes.
