The problem

Kentucky Mountain Bible Training Center relies totally on volunteers and donations from the community in order for their program to succeed. They contacted me to see if I could come and teach a one hour nutrition lesson for their clients at least twice a month.


The educational program response

I have been teaching lessons for four months now, using SNAP recipes.  This accomplishes their goal and assists me in acquiring my SNAP hours for the year.  The clients look forward to the time that we spend together and the foods that they get to sample.  I try to always include a recipe that uses some fresh fruits and vegetables because they seldom get those types of donations.

The audience usually consists of 10-12 male and female clients and oftentimes their counselors as well.

Program impact or participant response.

All of the participants in this program get hands on experience in proper techniques in measuring ingredients, reading recipes, food chopping skills, cooking and mixing, as well as the nutritional lesson that accompanies the lesson.  The clients are always appreciative and courteous while I am teaching and thank me after each lesson.  Their director contacts me frequently to schedule lessons and always shares with me that the clients look forward to my visits.  I always give each client a copy of the recipe that I have shared and have provided a folder for them, in hopes that they will use the recipes once they have finished their rehabilitation and go back to their homes.  Hopefully, my lessons and friendship will contribute to their success in completing their rehabilitation.
