Troopers come in all Shapes and Sizes

"Meet our dedicated 'Troopers' – a group of young first-grade girls who formed a Girl Scout Troop that partnered with the Whitley County EFNEP (Expanded Food Nutrition Education Program). While theseTroopers came in various shapes and sizes, they all shared a common challenge: some were hesitant to

try new foods and didn't have much affection for vegetables. Recognizing this, the EFNEP Assistant embarked on a mission to introduce them to a world of diverse foods, focusing on cultivating a liking for vegetables and fruits.

To achieve this, she introduced them to a 'HELLO BITE.' This meant encouraging the girls to take a single bite of any new food sample, even if they didn't think they would like it. The goal was to open their minds and palates to new culinary experiences. Remarkably, the Troopers embraced this challenge. For example, they loved a Mac and Cheese surprise with summer squash pureed incorporated into the dish, a delightful twist showcasing their newfound appreciation for vegetables

"The new CDC report paints a grim picture of children's diets.  With children in need of specific nutrients to support their growth and development, 1 in 3 (32.1%) children did not eat a daily fruit, nearly half (49.1%) did not eat a daily vegetable, and more than half (57.1%) drank a sugary drink at least once (March 14, 2023.)"  So with the girls finally agreeing to try the "Hello Bites," it became a win-win not only in the EFNNEP's eyes, but also of the parents as well.

The educational journey included discussions on 'My Plate,' with each girl receiving her own 'My Plate' to explore and learn about unfamiliar foods. They collaboratively categorized various foods into appropriate food groups on their My Plates during each meeting. 

The Troopers also delved into the 'LEAP' (Literacy, Eating, & Activities for Primary-aged youth) program.  This engaging program involved reading stories, engaging in discussions and activities, and indulging in hands-on snacks that encouraged them to explore and enjoy nutritious options. 

Recognizing that most of the Troopers' mothers were present during the sessions, the EFNEP Assistant extended her teaching to the adults. She incorporated the Healthy Choices for Every Body (HCFEB) Curriculum and shared recipes for those interested. She cleverly integrated this by introducing the 'Name That Food' game, a proven success from her years working with youth groups. In this game, she concealed a food ingredient within a recipe, and the Troopers had to guess the ingredients in the sample they were trying.

As a result of these engaging activities and educational initiatives, both the Troopers and their parents gained valuable insights into making healthier food choices, embracing new foods, and nurturing a love for fruits and vegetables.

Moreover, in the last class, the book 'My Food, Your Food' was read and incorporated into a journey around the world of samples. The girls had the opportunity to taste dishes from different countries. For example, they tried One Pot Spaghetti, made with whole wheat pasta, to represent Italy. The next stop was a healthy version of Eggroll in a Bowl from China. Lastly, they explored a miniature, individual-sized Strawberry Trifle representing America. The girls broadened their culinary horizons with these diverse dishes and thoroughly enjoyed making their own miniature strawberry trifles. These experiences expanded their appreciation for healthy and different foods, making their journey towards better nutrition both educational and enjoyable."
