This story is about a group in a substance live in facility. These individual live in a food
dessert area, with little or no access to fresh fruits and vegetables. The clients have been eating a lot of salty snacks and fast foods. They have not been doing a lot of cooking at home, or no access to healthy recipes. The Nutrition Education Program Assistant, from Jefferson County Extension Services has been teaching these clients cooking and eating healthy over seven or more years. This class has been ongoing, with new clients weekly. There is one client in the class that has been attending for many years, and has yet to complete all the required lessons. The assistant taught My Plate, Breakfast Made Easy, Planning Meals, Eating Better on a Budget, Keeping Food Safe, Reading Labels and Knowing Your Limits. The clients enjoyed every week the assistant arrived, were eager to participate and glad all the information they learned and amazed at how good healthy food tastes. The clients were taught to cut up fresh fruits and vegetables, using meat thermometers, proper handwashing, food safety, cooking using less sodium foods, low fat foods and milks and sugary drinks.
The clients enjoyed helping in preparing the Healthy Choices and recipes and tasting. Some of the clients were very excited after completing the seven required lessons. This one person has finally completed the class, after about five or more years and received a lead position in her program. They were given a certificate of completion , a bag of reinforcements, recipes made in the class.
