According to www.KyHealthFacts.org 23% of Trigg Countians report less than good health.  11% of Trigg Countians have diabetes and 30"% report high blood pressure.  Though there are many contributing factors, a big contributor is a lack of food preparation skills which leads to buying more expensive, processed foods that lack nutrient density and contain more fats, sugar, and sodium than recommended by the Dietary Guidelines for Americans.  To encourage more food preparation at home, the FCS agent offered a 6-part series on Baking from Scratch using the "Superstar Chef Kneads a Little Dough" curriculum.

The focus of the class was on at home food preparation skills and included reducing added sugars, fats, and sodium in baking as well as helping to create a healthier attitude towards desserts.  Lessons included quick breads, yeast breads, pies and cobblers, cookies, cakes, and pate choux pastry.

11 people completed the course, including 3 multi-generational mother-daughter or grandmother-granddaughter pairs.  73% of the participants were from SNAP groups that were taught by the Trigg County SNAP-ed assistant.  Six of the participants were part of multi-generational groups.  Not only did this provide food preparation skill practice for all attending, it helped to provide a family bonding time where the older generation could share knowledge and traditions with the younger generation.  

Among those completing the course, 100% reported increased skills and knowledge in baking.  73% noted an increase in baking from scratch instead of purchasing more expensive and less healthy mixes and processed foods.
