Don't Throw it Out

Beekeeping has blossomed in the past few years.  Garrard County has seen a nice increase in interest in beekeeping. The ANR agent has started monthly educational meetings at the request of several local beekeepers.  The meetings have been well attended by both seasoned veterans and new beekeepers.  The meeting topics are usually chosen to coincide with what a beekeeper needs to be doing at the time of year.  One such meeting, the topic was about harvesting the honey and bottling it and proper labeling.  One of the attendees brought a jar of her own honey to ask some advice.  The honey had started to crystalize and turn cloudy. The new beekeeper ask if she needed to throw it out or was there something she could do to save it. She informed the class she had 10 gallons of this honey. The ANR agent advised her place the jars in warm water to disolve the crystals and the honey would regain its wonderful color and clarity.  The agent received a phone call from her a couple of weeks later.  She reported that she had done as instructed and all the honey was back in it's original state.  She thanked the ANR agent for the advice. The 10 gallons of honey that almost got thrown out was worth $1000 on the retail market.   She was very thankful she didn't throw the honey out.
