Lee County is one of the unhealthiest populations in the state of Kentucky, they have one of the highest consumption rates of processed foods in the state. We at the Lee County Extension Office have been developing programs to address this issue. We have conducted programs such as, home gardening, raised bed gardening, food preservation, and food preparation for many years. We have had over 45 participants in the past 5 years attend at least one of our programs that address this issue. From the survey 75 percent of participants have implemented at least one of the practices that we have recommended. One participant verified they he and his wife have preserved over 2,000.00 pounds of fruits and vegetables for the past two years. The same two participants have improved their health.
