Fresh vs Canned: A Vegetable Lesson with Salsa

With the request of the Practical Living teacher, a program was created to educate youth on the difference of using fresh verses canned vegetables and how to properly use a knife. A MyPlate lesson was given at the start of the program followed by a knife cutting demonstration. Youth were asked to pick out the right way to hold a knife, then shown the correct way to hold a knife and how to cut a bell pepper. They were divided into three groups: fresh salsa group, canned salsa group, and jar of salsa/plating. The fresh salsa group made the Fresh Salsa recipe from Teen Cuisine, the canned salsa group used the Fiesta Salsa recipe from NEP Super Star Chef, the jar of salsa/plating group dished out sample cups of a jar of salsa for each youth along with the fresh and canned salsas and chips. After completing their assigned recipes and cleaning up their stations, youth received a plate of chips and three sample cups of salsa along with an evaluation sheet. Youth were asked to rate each salsa based on sight, smell, and taste. 60% of youth preferred the Fiesta Salsa recipe while 18% preferred the Fresh Salsa. 63% of youth said they would make the Fiesta Salsa recipe at home while 18% said they would make the Fresh Salsa recipe.
