This story is about a group of women that reside in a substance abuse facility. The Expanded Nutrition Education Program Assistant from Jefferson County Extension Services Office has been teaching an ongoing nutrition class, every Wednesday for one hour. Some of these women have been eating a lot of fried, fast food, salty snacks and sugary soft drinks. Some didn't have the knowledge of what and how much to eat daily. The nutrition assistant taught the Healthy Choices curriculum seven core lessons, and prepared the healthy recipe for the lesson or the nutrition yearly calendar. They enjoyed preparing the recipe and tasting. The women played games involving healthier choices. They were given handouts on My Plate, fruits and vegetables, servings and portion sizes. they were taught about knowing the limits of fats, salts, sugar and low fat dairy foods. They learned about proper handwashing, keeping food safe, storage, eating better on a budget, meal planning and breakfast made easy. The women enjoyed receiving reinforcements and completion certificate after completing the seven core. They were drinking more water and less sodas.
