Fighting Food Insecurity in Christian County

Christian County ranks high in food insecurity at 19% in comparison to 16% in Kentucky overall and 9% in top US performers. Limited access to healthy foods for Christian County is also high at 12% in comparison to 6% in Kentucky overall and only 2% in top US performers.

The Christian County SNAP-Ed assistant taught the Healthy Choices for Every Body program to an adult Therapeutic Rehabilitation Center. She gave a cooking demonstration in conjunction with each Healthy Choices class. While enjoying samples of the prepared food, the group learned about food management practices, nutrition, food safety and the importance of physical activity.  

According to pre and post-tests, food security within the group increased with 71% showing improvement in one or more food security indicators like having enough money to get food for your family. 86% showed improvement in one or more food resource management practices with 57% making written weekly or monthly food spending plans, checking for food items on sale at the store and comparing food prices more often. 100% of the participants showed improvement in one or more diet quality indicators with 57% eating vegetables more often a day, 86% eating more beans and peas, and 71% eating red and orange vegetables more often each week.
