The Rockcastle County Extension Office assists Mount Vernon Elementary School each semester with afterschool enrichment programs. Students usually meet each Monday for 2 hours afterschool for 6 weeks. Due to the Covid rates for Rockcastle County during the 21-22 school year, both the fall and spring session of enrichment needed to be offered virtually. Each semester, a letter went home with the enrichment course offerings, asking that a family member commit to assisting students who requested the Cook Together/Eat Together class. During fall semester, 12 students participated and during the spring semester 10 students participated. Each week the Extension Office furnished the students with recipes on that week's topic along with links to online videos done by Extension Service- FCS and 4-H (when available). We featured one particular recipe and provided one or two of the ingredients for the recipe. The following week the students returned their evaluation of the at-home activity. Resources from cook together, eat together, 4-H baking curriculum and Super Star Chef. The evaluations showed that 90% of the students (with the help of an adult) prepared the recipe suggested during the week. 73% of parent, grandparents or other family members recognized the greatest benefit of the project was spending more time with their child. 64% of students said that they are excited about cooking in the future.
