With the increased numbers of clientele wanting to preserve their own food and to bring back heritage commodities, The Owsley County Cooperative Extension Service offered a Country Ham Curing class. Based on the high amount of questions and curiosity from adults, the agents joined to offer “curing country hams” workshops for adults and Youth. Over the last two years a total of 44 adults and 12 youth have participated in the workshops. Owsley County adults reminisced about their grandparents applying this “lost art,” but had never had the opportunity to do so themselves. 100% of the adults were amazed by the whole process and enjoyed learning about and seeing the end product nearing completion after each session. This program has been a huge success and is expected to grow in the years to come. The Owsley County Extension District Board was so impressed with the program that they agreed to purchase a Ham Curing building and place it on the property for future use.
