The Power of Fruits and Vegetables

According to the Center for Disease Control and Prevention, consuming enough fruits and vegetables reduces the risk of many chronic diseases, such as type 2 diabetes, cardiovascular disease, and obesity. One way to address this issue is by learning the importance of eating healthy.

The Breathitt County SNAP-Ed Assistant, in partnership with Middle Kentucky Head Start, taught adults the Healthy Choices for Everybody Curriculum. As a part of these classes, participants learned the importance of eating healthy, food safety, meal planning, and eating better on a budget.

Participants behavior change was indicated by entry and exit forms. Over half of the participants showed a positive increase in their overall diet quality, as well as increasing their consumption of fruits and vegetables.
