Chaney's Dairy Barn premium, homemade ice cream made with milk & cream from their Jersey cows, contacted the University of Kentucky's Food System Innovation Center to assist with nutritional labeling for several of their ice cream products: Banana pudding, Big red rumble, Birthday cake, Butter pecan, Chocolate cookies, and cream, Cookies and cream, Mint chocolate chip, Strawberry, Vanilla, Wow now brownie. FDA regulations require that the product contain a minimum of 10% dairy milkfat, no more than 100% overrun, and weigh no less than 4.5 lbs. per gallon. In addition, a nutritional facts label showing what nutrients and other ingredients are in the food is required for packaged sale.
