Several economical recipes were demonstrated and offered for sampling. Results from written surveys at the conclusion of the program indicated that all participants had a greater understanding of vegetarian diets.  Several participants planned to serve at least one vegetarian meal a week.  Ten participants indicated that they could save ten or more dollars a week with their food budget if they prepared one or more vegetarian meals.
