A local Recovery center in Perry County partnered with University of KY Nutrition Education Program Assistant Senior in Perry County for a series seven Nutrition Education classes focusing on the coalition with recovery and nutrition. Using Healthy Choices curriculum seven sessions were taught. Where healthy meals were made and sampled by participants. Recipes were given along with nutrition education information participants interacted with each other in preparation for meal. Where knife handing skills, food safety, budgeting, and meal planning, a long with the importance of daily physical activity were discussed in each session. Reading recipes was one of the areas participants found most interesting most of the participants did not understand how to measure ingredients or the different between wet and dry measuring cups.
SNAP-ED Assistant Senior would talk about cooking terms and measuring tips. Most participants would thaw protein on the counter or in sink at the beginning of series. One participant stated they that they really did not know it wasn’t safe to thaw meat on the counter until taking this class. With knowledge received from the class they would no longer be thawing meat on the counter or in the sink. One participant made a comment about their child telling them how much they now liked eating at home with all the new recipes and how great they tasted. The quote (Wow you now can cook after taking these classes). One client in the program was a recent amputee due to diabetes. Working with another community partner the Supplemental Nutrition Assistance Program Senior was able to help obtain a wheelchair for the client. Another example of communities coming together to help people.
Before starting the series and at the end of series participants were asked to respond to a survey. Resulting in 100 % of improvement in one or more of the categories.
