Moving Out
The Perry County School District collaborated with Perry County Supplemental Nutrition Education Program (SNAP-ED) Assistant Senior for nutrition education for a senior class. Where numerous students would be leaving foster care upon graduation. A series of seven classes were held with the students using University of Kentucky Healthy Choices for Every Body curriculum with focus on Diet Quality and Food Resource Management.
Nutrition Education Information was given to each student along with recipes. Students would work as teams to prepare and sample recipes. Each team was ask to sample another teams recipe. Students were taught how to prepare recipes following food safety rules, diet quality, ways to starch food dollars, what is on a label, meal planning along with the importance of daily physical activity. One student commented his foster mother didn’t think he was responsible enough to use the stove. Upon completion of the series the student stated his foster mother would now let him use the stove. The student with their new knowledge, could and would now make dinner for the foster family. Students were given pre and post surveys. Post surveys indicated improvements in Diet Quality of 81%, Food Resource Management of 73.3% and Food safety of 66%.
