The University of Kentucky Department of Forestry and Natural Resources, Kentucky Cooperative Extension Service, Kentucky Maple Syrup Association, and the Kentucky Center for Agriculture and Rural Development?have a continuing partnership working together to create resources and opportunities for Kentuckians interested in maple syrup production and use. From this collaboration, the idea of a 4-H Maple Syrup Program was initiated.
In 2021, the University of Kentucky departments of Forestry and Natural Resources, 4-H Youth Development, Agriculture and Natural Resources Programs, and Nutrition Education Program, and the Kentucky Maple Syrup Association partnered to create the Kentucky 4-H Maple Syrup Project. The multi-disciplinary team worked together to create a Kentucky 4-H Maple Syrup Project Leader’s Guide and Cookbook, as well as host hybrid (virtual/in-person) trainings.
The leader’s guide includes five units geared towards junior 4-H members (9-13 years old) and focuses on the history, production, and use of maple syrup. Each unit provides background information and instructions for the 4-H leader on how to educate and engage youth in maple syrup production and use. This project will help 4-H members develop an understanding of the key steps involved in successful maple syrup production. In addition, this project will help members develop basic skills in tree identification, tapping, and baking. Members will become wise consumers of maple products and will become familiar with their use in recipes.?
In February of 2022, two hybrid trainings were hosted at the Boone and Letcher county Extension offices. In attendance were ten county Extension agents, two Extension program assistants, one volunteer, and five state Extension staff. The training included virtual presentations and cooking demonstrations (photo 1) and in-person hands-on learning experiences (photo 2).
In addition to the hybrid trainings, the team has also presented information about the new project at the Kentucky State Extension Conference (January 2022) and at the Acer Access and Development Program – Kentucky Maple Syrup Project Meeting (March 2022).
The leader’s guide and cookbook are currently in draft form and are being piloted by three county 4-H programs. After the pilot phase, the team will make any necessary revisions, finalize the guide and cookbook, and place on the Kentucky Maple Syrup Program website for statewide use. In addition, the team plans to have additional trainings in 2023.
