LEAP is nutrition education program targeted toward headstart aged youth. Lessons range from promoting exercise to eating more fruits and vegetables. In Adair County, In 2017, according to the US Census there were 1,079 youth in Adair County ages 5 and under or nearly 20% of the population. 30.7% of Adair County families with children live in poverty also according to the Census, therefore it can be estimated that many of these children under five qualify for SNAP benefits.
Understanding this need, it was determined prudent to create a community partnership that addressed this disparity. The local headstart was determined to be a great starting point. They actually reached out first about available resources for their students. This was then followed up with the offer to teach LEAP curriculum in-person to their two classrooms. After a meeting with the Adair County Headstart Director, the Very Hungry Caterpillar curriculum was selected to be taught.
The Very Hungry Caterpillar LEAP Curriculum’s main focus is to acclimate youth more with eating fruits. In the book the caterpillar eats several different fruits, including a strawberry, pineapple, and plums. As the book was ready these fruits were pointed out, culminating in eating taste testing each of these. An added element was that each of the fruits tasted were dehydrated, making them extra sweet and an adding a unique textures.
When the workshop was concluded, the youth were asked their thoughts on the fruits they tasted and if they were more likely to eat these fruits later. Their verbal responses indicated positive results. The majority liking the strawberry and pineapple, while the plum was more of an acquired taste. Of equal importance to these positive results was the partnership made with local head start. They have since utilized our office a number of times for educational programs, such as their graduation. Additionally, discussions have taken place about offering parenting classes in conjunction with the headstart in the fall.
