Mother in search of Healthier Choices for Dinner

This mother contacts the Extension Office in search of some information on gardening and healthier dinner ideas for her family. After talking for a bit on some of the same old dinner ideas she was given a 2022 NEP Calendar and some gardening information for her new raised garden. She spoke of raising her own fresh vegetables to assist on her budget when purchasing them at the grocery when she noticed the pic of the Apple Spinach Salad on the front. She quoted, “This looks really good, I think I will try this on my family tonight”. She stated that the family wasn’t big on salads, but she was going to give it a shot. Along with the Healthy Choices Newsletter, she had a plan in place to give it a go.

The next day an email was sent with a thank you attached saying,

“Thank you again for providing me with the gardening material that I requested and the wonderful recipe calendar. The cover photo with the salad was so appealing that I made it for my family for dinner the same day! It was a big hit, we thoroughly enjoyed it! I already had most ingredients on hand except apples and carrots so I substituted fresh pears for the apples and instead of carrots, I used yellow peppers. We paired the salad with grilled chicken for a full meal. Yummy!”

I’m reading through the garden materials in preparation for starting my raised garden this season… So excited!
