 Getting Back on Track 

 

 

 

 

 

Two local rehabilitation centers in Floyd County, Hope in the Mountains and Mountain Recovery needed information on teaching their participants how to provide healthy meals for themselves and their families once they return home. The centers contacted the Floyd County Cooperative Service, (Expanded Food Nutrition Education Program Assistant) (EFNEP) for help. A series of classed were arranged.   

 

The group wanted information on how to provide delicious meals for their families and how to change their eating habits to help improve their overall health.
 The classes were taught once a week for one hour each visit. Subjects taught were, portion control, healthier cooking methods, eating more fruits and vegetables, making half your grains whole, learning to budget your food dollars, using a crock pot for more convenient cooking and resource management. Teaching methods consist of power point presentations, cooking demonstrations, taste testing and hands on activities. The participants were given healthy recipes taken from the Nutrition Education Program to take home for their families.
 After completing the classes 70% of the participants reported that they now  cook much healthier meals at the facility’s and are planning on using the information that was given them with their families when they return home.
