Food shortages during the pandemic attributed to an increased interest in the Tri County Food Preservation classes for 2021. 

Bourbon, Clark and Nicholas County Family and Consumer Sciences agents joined together to offer hands-on food preservation workshops during late summer 2021.The 3-4 hour workshops were offered one time in each county and at a different time of day for each location.  Several participants shared appreciation for the opportunity to attend a neighboring county office when their home county date and/or time was not convenient. During the workshop, each participant had the opportunity to select and prepare produce as well as preserve using proper methods and techniques.  Each individual experienced boiling water canning and pressure canning processes of food preservation.  

Of the 21 individuals participating in the workshop, 12 were first time canners and 9 were first timer pressure canners.   100% of those in attendance indicated that they learned something about food preservation that they did not already know and 100% planned to apply techniques learned.

Three month follow ups indicated 100% of participants canned produce after attending the workshop!   One first time canner reported  canning 301 jars of produce. She shared "I cannot believe I can do this!  Thank you and we are so going to enjoy this during the winter."
