Dining with Diabetes

Outcome: Long-Term Outcome

According to the kentuckyhealthfacts.org, Laurel County has 39% of adults who are overweight or obese with 19% diagnosed with diabetes.

The Laurel County Cooperative Extension Service offered a 4-week program that focused on learning about diabetes and how to make diabetic friendly meals with the Dining with Diabetes Program.  The program was aimed towards adults with diabetes and/or family members responsible for meal planning and preparation.

Over 7 adults participated in one or more lessons with an average attendance of 6 adults that attended every class.  As a result of the program:

 80% reported exercising continuously for 30 minutes on 3 or more days of the week.

100% reported they cooked more meals at home

100% utilized portion control as one way to manage diabetes

80% feel confident they can keep their diabetes under control or help the person they care for keep their diabetes under control.

Some of the participants stated, “I have learned ways to modify recipes and to make them more diabetic friendly!”

 “I learned that My Plate recommendations for a diabetic and that I need to eat ½ my plate with vegetables.”

“To read labels more and to buy 100% whole grain products.”
