Zooming with HOPE

When the pandemic began classes quickly had to become virtual. The Supplemental Nutrition Assistance Program Education senior assistant from the Fayette County Cooperative Extension Office partnered with The Hope Center, a rehabilitation facility, to tackle this problem by providing nutrition education classes to the clients via zoom. 

Through the course of these classes participants were shown how to make easy healthy recipes on a tight budget. They were also instructed on how to best preserve foods, meal plan, and stretch their dollars at the grocery store. The recipes given to the class were all focused on having a high nutritional content as well as a low cost per serving.

Upon completion of the program 100% of the participants had shown improvement on their food resource management skills since the first class as evidenced by their responses on the surveys administered on the first and last class. Furthermore, more than 80% of the participants showed improvement in more than one measure of food resource management. These results show a dramatic impact on the self-sufficiency of participants, who are now better able to manage the resources that they have.
