The Madison Middle School Resource Center director contacted the Madison County Cooperative Extension Service to collaborate with Expanded Food and Nutrition Education program assistant. Our families are at a higher risk more than ever for obesity.The Center for Disease Control lists obesity as one of the underlying risk factors for severe consequences from Covid 19. With all the challenges of education this Covid year we formed an educational and fun microwave cooking club.  Nutrition lessons were taught teaching my plate, food safety and microwave cooking safety. A protein lesson was taught and the students cooked their own omelet in a mug. Fruit and vegetable lessons were taught and baked apples were enjoyed.  For the healthy snack lesson they made english muffin pizzas. The resource center went over and above to make sure these kids had their own kits to cook food. As a result of these fun and education classes 100% of students gained knowledge and improved their ability to choose foods according to federal dietary guidelines.  67% gained knowledge to improve their ability to choose and prepare simple affordable nutritious foods.  56% gained knowledge and improved their physical activity practices.
