According to the Census.gov website, Carter County has a population of 26,797 people. When COVID first hit in February of 2020, programming for the Nutrition Education Program (NEP) Assistant Senior came to a screeching halt. Everything shut down, nothing had ever happened like this in history. To reach targeted audiences, one must think of new ways- we must go virtual. The NEP Assistant Senior recorded lessons and emailed them to participants and would then do follow-up phone calls to see if participants had any questions or sit in on meetings to answer any questions, as she could not teach the lessons live as bandwidth from the internet would not allow & would freeze up. In doing this she was able to graduate her number of needed adults through. With 24 graduating 96% showed a positive change in the way that they eat, 72% had an improvement in their overall diet quality, 64% of participants had an improvement in their Food Resource Management, 46% improved their Food Safety behavior.
