During the COVID-19 pandemic at statewide “Healthy at Home” initiative was issued in Kentucky. This initiative encouraged Kentucky residents, especially those with underlying health conditions, to stay at home as much as possible to avoid becoming ill due to the rapidly spreading corona virus. Allen County, KY Is 64% below the Snap threshold 130% poverty. Allen County Cooperative Extension Office, Allen County SNAP-Ed program, Allen County Schools all team together and during the time that the children were unable to attend school and with Allen County being 64% poverty. Mammoth Cave Area Homemakers create Sensational Salads

Consuming the recommended amount of vegetables each day is linked to a reduced risk of heart disease, type 2 diabetes, some cancers, and obesity. This equals 2 to 3 cups of vegetables a day, depending on age and gender.
