Situation:
The Center for Disease Control reports that 33.2% of Kentucky residents are obese and 30% report no leisure-time physical activity. Kentucky adults rank among the ten highest for poor consumption of fruits and vegetables with 46.2 % reporting consuming fruit less than 1 time per day and 24.9% consuming vegetables less than 1 time per day. This situation threatens the quality and years of life of Kentuckians. Individuals who are overweight or obese are at increased risk for many chronic health conditions including type 2 diabetes, heart disease, stroke, and some types of cancer. Increased consumption of unhealthy food, stress, and environments that promote physical inactivity are largely responsible for the obesity epidemic. The most recent Kentucky County Healthcare Profile report concluded that 34.8% of Caldwell County residents are obese. It is evident that lifestyle changes, such as eating healthier diets and increasing physical activity, are needed for a healthier Caldwell County and Kentucky.
Long-Term Outcomes:
*Individuals will reduce their risk for nutrition-related health problems.
*Individuals will increase their physical stamina.
*Individuals will prepare meals at home 5 or more times a week.
*Individuals will maintain a healthy weight.
*Individuals will live longer, healthier lives.
*Youth are at a lower risk for serious disease and illness.
*Youth are competent, capable, contributing adults as a result of their participation in 4-H Health programs.
Intermediate Outcomes:
*Individuals will adopt one recommendation from the dietary guidelines.
*Individuals engage in regular physical activity.
*Individuals demonstrate food preparation skills.
*Youth adopt healthy behaviors that lead to a healthy lifestyle that include making healthy lifestyle choices, not engaging in risky behaviors and handling stress.
Initial Outcomes:
*Individuals will be able to identify the components of a healthy diet as defined by the Dietary Guidelines for Americans.
*Individuals will recognize the importance of physical activity as part of a healthy lifestyle.
*Individuals will describe food preparation techniques.
*Partners will recognize the need for community social, environmental, and policy systems to address efforts toward improving healthier lifestyles.
*Youth will be aware of the health issues related to smoking or using tobacco products.
*The number of youth that report feeling good about themselves.
*The number of youth making healthy lifestyle choices.
Evaluation:

Initial Outcome: Individuals will be able to identify the components of a healthy diet as defined by the Dietary Guidelines for Americans.

Indicator: Number of individuals reporting an increase in knowledge related to components of a healthy diet.

Initial Outcome: Individuals will recognize the importance of physical activity as part of a healthy lifestyle.

Indicator: Number of individuals reporting understanding the importance of physical activity related to a healthy diet.

Intermediate Outcome: Individuals will adopt one recommendation from the dietary guidelines for the purpose of improving their diet.

Indicator: Number of individuals reported adopting at least one of the recommendations from the dietary guidelines.

Intermediate Outcome: Individuals engage in regular physical activity.

Gardening in Small Spaces

Major Program: Accessing Nutritious Foods (general)

The Caldwell County Family and Consumer Sciences Extension collaborated with county KEHA leaders to offer a program on gardening options for small spaces. A total of seventy-three participants attended the program. End of session evaluations documented that 78 % of participants gained knowledge about raised bed and container gardening options. 68 % stated their level of understanding of plant spacing for common vegetables increased after the program.  86 % indicated plans to grow vegetables
