Situation:

According to the 2010 census, 20% of adults and 27% of children in Rockcastle County live in Poverty. Lower income families are not meeting the recommendations for fruit and vegetable consumption.

According to the Center or Disease Control and prevention, Kentucky adult obesity rates rank among the 10 highest in the US; and Kentucky youth rank among the 10 highest for obesity in the us. 30% of Kentucky adults report not participating in any physical activity. The CC also reports that Kentucky is 10th highest for poor consumption of fruits and vegetables.

Long-Term Outcomes:

Families will be able to more effectively budget their snap ed benefits so that their food lasts throughout the month. Families will learn how to prepare more nutritious meals and will supplement their food budget with vegetables that are grown and preserved at home.

Intermediate Outcomes:

Families can feed their children throughout the summer months when there is no school. Children will learn to eat nutritious foods and will increase their consumption of fruits and vegetables.


Families will learn to safely preserve foods that they have grown.



Families will prepare meals at home at least 3 times a week.


Individuals will engage in regular physical activity.

Initial Outcomes:

Children will try fruits, vegetables and dairy products that they have never eaten. Adults and youth will learn to eat a healthier diet.

Evaluation:

Initial Outcome: Youth and adults will learn basic cooking techniques.

Indicator: youth demonstrate basic skills

Adult Food Preparation/ Nutrition Classes

Longterm Outcome:  Adults improve their health with a more healthy diet

Indicator: number of adults who report lowered blood pressure, lower cholestrol, and health A1C levels.

     During the Spring and Fall of 2019, 3 seperate sessions of Cook Together / Eat Together was offered by the Rockcastle County FCS program.  The FCS agent lead the food preparation sessions and taught the basic skills to the youth in the program.   Each session of the program had 6 dinner socials.   A total of 22 youth, (accompanied by 16 adults) participated in the programs.  21 of the youth earned their cookbooks by attending at least 3 of the 6 sessions o

Rockcastle Farmers Market

Major Program: Farmer's Markets

According to CEDIK data, 249 Rockcastle County Farms produce on less than 50 acres of land and 2% of crops grown in the county are fruits and vegetables. There are only 2 grocery stores in the county which creates a perfect market for farmers to sell fresh produce to local consumers. Because of this need, the Rockcastle County Farmer’s Market and others have saw opportunity for growth.This past market season, there were 8 total vendors who sold a total of $27,284. Outdoor Cooking

In partnership with specialist Martha Yount an outdoor cooking series was planned and executed on social media platforms.  The plan was to show people now to use cast iron cookware over the fire as well as baking in cast iron dutch ovens with charcoal.  The series is ongoing and has been a successful out reach to this point.  The outline of the series is based on cooking everywhere from you backyard to backcountry campsites.  The program content consisted of setup of outdoor

Rockcastle FCS reaches families with Pick Up and Go Program Bags during Covid Pandemic

Social distancing measures during the Covid 19 pandemic has caused Extension Agents to need new ways to reach families with educational information.  The Rockcastle County Extension FCS program has made 'Pick up and Go Program bags' to reach families with needed educatonal resources.  Starting April 1, at least one "Go Bag" was assembled and distributed each week.   Most weeks, an adult and a youth bag was assembled.   Due to the popularity of the bags, the
